The title of this post is already a giveaway. In case you're still baffled why I titled this post as such, those little pancakes you see in photo (both in rakish white and brownish green color) being heated on the griddle were at Slappy Cakes. And we had so much fun making those little concentric circles and putting the garnishes on top once we're satisfied with the doneness of the flapjacks. But I tell you more about that later.
This visit to Slappy Cakes came about when an invite was posted by a former colleague and friend of mine on Facebook for a get-together. When asked on which restaurant in Eastwood I could suggest for such a meet up, Slappy Cakes was the one that immediately came to mind. I have not been to Slappy Cakes yet but a good friend of mine has been there and even posted how she enjoyed cooking her own pancakes. I was nevertheless intrigued.
To be quite honest, I'm quite petrified of the prospect of me creating my own stacks of pancakes. I was never been allowed to cook at home. Not that I don't want to learn how to cook. I even showed eagerness on frying and whatnots by endlessly watching cooking shows like Wok With Yan and Cooking With The Dazas. I even watched this cooking segment that usually air right after the Chinese soap operas on RPN 9 every Sunday years back. However the most that I could do, cooking-wise, is to fry sunny side up eggs and hotdogs. Heck! I don't even know how to cook rice even with the use of a rice cooker.
Before we get our digs on the flapjacks, we also tried the savory dishes here at Slappy Cakes. And I must say they're quite tasty and it fully satiates our cravings for carbs and all things salty.
I very much like the sweet-smoky BBQ flavor with a little spicy kick from our Buffalo Wings. I also got to try my friend Jolee's order of Pesto Pasta w/ Anchovies. Rightly seasoned and surprisingly not oily with lots of grated cheese to boot. The anchovy bits gave it that slap of saltiness tempered down by the nutty pasta sauce. Ezron was seem quite happy with his Slappy Burger, an intimidating proposition to bite into especially with those crispy bacon strips sticking out from the buns like so. The Southern Fried Chicken Tenders that Louie Lyn ordered has a crispy coating from the panko breadcrumbs. I may have deemed it too dry but that can be remedied when dipped on the provided side of bechamel sauce. Though a side of gravy might also works wonders as well. My Pulled Pork Sandwich was also quite a mouthful. Marinated in Kahlua and guava BBQ sauce, the sandwich in itself was quite flavorful.
And the moment that we're waiting for came: Getting our own hands dirty in creating our own pancakes. We just can't contain our giddiness as we each had our turn on the squirt bottles, careful in making those perfect edible discs. We also had a grand time putting our desired topping on the flapjacks as it gets heated on the griddle.
"You have to make sure there's bubbles forming on the surface before you flip it over." Reminded Louie Lyn when I almost flip my own pumpkin pancake to the other side too soon. Well, patience is the kind of virtue that I don't have especially when it comes to food. He-he!
We ordered the two special pancakes they're offering for the holiday season. The Pumpkin Spice Pancakes and the Bibingka Pancake. Aside from the pumpkin batter, it also comes with banana slices and Nutella syrup for toppings while the bibingka batter comes with grated coconut, salted egg and kesong puti (white cheese). Between the two flavors, I favor the bibingka pancakes since it's batter is not too sweet, a perfect canvass to flavor it more with it's toppings. By the way, it was Ezron's treat that's why we got our pancake dessert treat that night. Hooray!
Though it was an experience for me to cook our own pancakes, I would still prefer someone else's doing all the work for me. Look how disorganize my pancakes appearance were!

Thanks again to Jolee, Ezron, Ponsy and Louie Lyn for that wonderful pre-Christmas get-together dinner. The rest of our party only followed suit when we've retreated to Starbucks just right beside Slappy Jacks to get our caffeine fix (and also to help someone fill their card's sticker slots for the planner). Hopefully, more people would join us on the next get together of this sort that might happen again sometime next year.
